TANGY CURRY: Bendekai pulusu is a traditional Andhra dish with bhindi and tamarind.
New Delhi: Vegetable prices making you see red? Maybe there is life without the tomato. Enter the tamarind. You can put it in everything - your vegetables, meat and even your rice!
I'm going to make Bendekai pulusu, a traditional Andhra dish with bhindi and of course tamarind, instead of tomato.
Ingredients:
1 tsp Mustard seeds
1 tsp Dried red chillies
1 tsp Crushed garlic
1 tsp Curry leaves (raw)
2-3 Green chillies
1 tsp Chilli powder
1 tsp Turmeric powder
2 tsp Coriander powder
1 cup Tamarind juice
1 cup Water
100 gms Ladies finger
2 tsp Ginger, julienned
Salt to taste.
1 tsp curry leaves (deep fried)
Til oil to cook in.
Method:
In a hot kadai heat some til or sesame oil until hot. Add mustard seed, dried red chillies, crushed garlic, curry leaves and temper. Then add the powdered spices and finally the tamarind and water to make a gravy. Reduce.
Now before you add the ladies finger to the gravy, shallow fry them very lightly in some oil. They should just be coated with the oil. Do NOT fry till tender.
Once you've added the ladies finger to the gravy, add the ginger and cook for awhile.
Garnish with deep fried curry leaves.
